Vegan coconut milk powder is an atomized milk made up of more than 85% coconut.
Sodium caseinates (milk proteins), acting as emulsifiers in the conventional version, are replaced by a modified corn starch.
The corn maltodextrin carrier and the starch contained in the vegan coconut milk powder are technological aids, they have no functionality in the finished product. They are used only in the process of obtaining coconut milk powder vegan.
However, the manufacturer decides for the finished product labeling as for the interpretation of the regulations may vary.
Noticeably less "stable" than the conventional version, it fits perfectly in any preparation containing for example a little xanthan gum.
